White Rabbit is a brewery that doesn't want to be constrained....and maybe that's why we like it up in the Hills, away from the norm, a place that we are free to think for ourselves.
At home in Healesville in the midst of the Yarra Valley, we like to exercise our right to be a little different and brew beer that doesn't just follow the others.
So what is it that we do? Well, someone said that to describe what we're up to at white Rabbit is a bit
like a couple of Belgian hippies gatecrashing a lovely, traditional English tea party!
White Rabbit was not born to follow. To be different is easy...to be
different and remain a wonderful drinking beer is hard. You have to start with tradition but then you need to expand your mind a little!
To make beer, you use four basic ingredients. But then, just as Alice in wonderland says..."I've a right to think" ...you have to go beyond tradition; you've got to do something special with those ingredients.
The ingredients are malt, water, hops and yeast.
White Rabbit has chased down and experimented with some of the best quality sources of
each of these to invent our first product, a dark ale.
... A dark ale which is essentially malt driven but with the firm bitterness of whole hops to ensure balance.
Subtle yet delicious, with flavour built around yeast that is allowed to go wild!
Yeast normally does its thing in closed cone like tanks that hide and
constrain its work but we've got a couple of open fermenters which are like big soup tins without lids.
We let the yeast have a party and it likes to play hard!
Our dark ale is brewed using these open fermenters, custom made in Europe to
combine traditional methods with White Rabbit thinking.
White Rabbit Dark Ale seeks to be a beer you will love to drink anytime,
anywhere...but intrigue you with complex flavours and handsome character.
